Coconut and banana bread
I had two bananas to use up that were very ripe and decided to just put ingredients together and see what came out of it.
Didnt really work with measurements but this was really a quick and an easy bake.
ingredients roughly were:
2 ripe bananas
1cup dates (soaked for about an hour and pitted)
1/2 cup mixed seeds
1/2 cup arrowroot flour
1 cup coconut flour
1/4 -1/2 tsp baking powder “gluten free”
a pinch salt
1.preheat the oven at 180 c/ gas 4
2. In a hand blender mix the bananas and dates and blend until smooth
3. Whisk the eggs in a bowl and add the blended mixture.
4. Add the remaining ingredients and mix together until well combined and spoon the mixture into a small greased loaf tin and bake for 40-45 mins or test with a skewer / knife inserted in the centre of loaf. It should come out clean.
5. Remove and cool down for at least 10 minutes on a wire cooling rack and Enjoy 😀
