Spring onion omelett with tomato and cucumber garnish🍅

Heat olive oil in a frying pan meanwhile whisk together the eggs, spring onions and season to taste. Pour into the pan and cook over low heat for 3-5 mins depending on how well you like your eggs cooked.

Serve the omelette sprinkled with the remaining spring onion, chopped cucumber and tomato.

Season with herbs as an option 😀
