Prawn and vegetable fried brown rice😋


200g basmati brown rice

2 tbsp vegetable oil
2 garlic cloves chopped
1/2 tsp ginger
1/2 tsp chilli flakes
150g mixed frozen vegetables
1 onion finely chopped
250g pack peeled cooked small frozen prawns
1 tsp all purpose seasoning
1/2 tsp curry powder
Tajin Mexican seasoning “optional”
Salt and pepper


1.Heat half the oil and brown half the onions in a saucepan, Add the rice to the saucepan for a few minutes , adding the ginger, curry and all purpose seasoning. Add 600ml water to the saucepan. Bring to boil, cover, then simmer for 20 mins or until almost all the water has gone. Leave off the heat, covered, for 5 mins more
2. Heat the remaining oil in wok or large frying pan. Add the remaining onions , garlic and chilli, seasoning then cook for about 30 secs making sure not to let it burn “just browned”. Add the mixed frozen vegetables and fry for about 4 minutes or until water dissolves, throw in the prawns and cook until water dissolves, throw in the cooked rice, stir fry for at least 2-3 mins or to your taste
3. Serve with some oven cooked chicken wings and salad of choice
4. Season with salt and pepper optional
5. Enjoy 😋😀
