Quinoa, sweet potato and lentil burger

I make up recipes as I go, so these are rough guidelines and therefore use your judgement 👍


1 small sweet potato
1/4 cup quinoa
1/2 cup green lentils
1/4tsp cumin
1/2 tsp garlic
1/4 tsp ginger
1/2 tsp paprika
1/4-1/2 tsp crushed chillies
1 egg
4 tablespoons semolina

1. Grate the sweet potato and in a pot cook until soft
2. Place green lentils in pot, measure about a cup of water and cook for about 5 mins , then adding the quinoa and cooking until water is absorbed and quinoa looks fluffy
3. Drain remaining water and add all ingredients together and mix together with a wooden spoon/ hand masher
4. Set aside to cool down then leave in the fridge for a few hours at least
5. Remove from the fridge and add about 4 tablespoons of semolina to bind ingredients together
6. Shape into burgers and oven cook on a greased tray until golden brown
7.Enjoy the burgers on a bun of your choice, I used the Sainsbury’s whole meal muffins and added extra mature cheese, smoked BBQ and tobacco sauce
