The hubbys chilli


* chipotle chilli flakes
* 2 medium sized white onions
* 1 tsp garlic granules / 2 fresh cloves
* 1 big bunch of fresh coriand
* 3 fresh red chillies
* olive oil
* 2 carrots
* 1 tablespoons sweet smoked paprika
* about 1/2 teaspoon turmeric powder or more
* 1 tablespoon cumin powder
* 750 g lean minced beef
* 1x 400 g tin of chopped tomatoes
* 1 green pepper or use any colour
* 1 x 400 g tins of kidney beans in chilli sauce
* 10 drops of tobasco habanero
* Salt and pepper to season
* 300 mls vegetable stock (use a reduced sodium /fat ) if on a reduced calorie diet
* 2 tablespoonfuls olive oil
* 2 pinches of sugar (optional)


1. Season mince with salt and pepper before cooking
2. In a large pan “brown the mince in the olive oil on medium – high heat breaking it apart with your wooden spatula ” then drain excess water/ juices from the mince (move to the side before adding the finely chopped onions and garlic until browned or mix together for a good 3-5minutes
3. Add the chopped tomatoes and cook for a further 2-3 minutes, before adding the 2 pinches of sugar
4. Now add your spices cumin, garlic, turmeric, paprika, chipotle chillies and mix together before adding your vegetable stock
5. Add your kidney beans and those drops of tobasco habanero
6. Add the green pepper
7. leave to bubble and cook away (simmer) for as long as you like on moderate heat “low if cooking longer”, about 1hour and a half

I enjoyed this chilli with quinoa due to its health benefits, and only a handful of tortilla crisps as a treat
