Ingredients
*I tablespoon chilli pesto
*Handful parsley chopped
*Half red onion finely chopped
*Salt and pepper to season
*4 chicken breasts serves 4 or alternatively 500g lean mince chicken to make 4 burgers
*4 brown (whole meal) rolls /buns
*Cling film
*Olive oil
*Paprika
Method
1. Preheat oven to 180 degrees fan oven
2. If using chicken breasts put them one at a time between two pieces of cling film, and bash with a rolling pin to about 1-2cm thick.
3. Once you have finished bashing them put them into a mixing bowl and mix with the chilli pesto, adding the onions and parsley and the seasoning and shaping into burger patties into a greased baking tray
4. Meanwhile peel your potatoes and wash them, then using a chopping board chop them into half and cut and shape them into chips
5. Prepare a baking tray and drizzle the chips with olive oil and season with paprika
6. Now oven cook the burger and chips for 20 minutes or until the burgers are cooked through and chips look nice and crispy
7. Enjoy them with a salad (and I used a Nando’s medium sauce on the burger) Optional
