•160g Taste the difference oak smoked outdoor bred dry cured bacon lardons
•175g large flat mushrooms chopped
•Sainsbury’s cheddar style with caramelised onion coconut based cheese grated
•2 handfuls of spinach
•half a small onion (optional)
•Taste the different sweet squash
•olive oil
•Pepper
•1/4 tsp Paprika
•maggi cube
Method
* Preheat the oven at 180 degrees fan oven
* Wash the squash and cut it into half, using a tablespoon scrape out the seeds and put both sides facing up on a baking tray and drizzle a little oil, season with pepper and bake in the oven for about 30 minutes
* Meanwhile in a wok or pan, drizzle a little oil and fry the bacon for a few minutes, adding the onions, mushrooms and spinach last. Season with paprika and maggi cube and set aside
* Once your 30 minutes are up, remove the tray from oven and add the filling into the squashes, topping up with grated cheese and return to bake for a further 10minutes
