Vegetable stir fry


•2 small chopped carrots
•1 chopped /sliced leek
•1 chopped small onion
•1 chopped yellow bell pepper
•2 handfuls greens
•3/4 cup quinoa
•2 tablespoons olive oil
•Schwartz chicken jambalaya (optional )
•Salt and pepper (optional )



1. Cook you quinoa according to the packet instructions ( usually 20 minutes) and rest for 5-10minutes
2. In a meanwhile whilst the quinoa is resting, heat a wok (pan of choice) on medium-high heat and brown onions with 1-2 tablespoons (at least) of olive oil.
3. Add carrots, leeks and cook for a few minutes before adding the greens and peppers and stir
4. I added 1/2 tsp of the Schwartz chicken jambalaya seasoning as it was in my cupboard st this point (add any seasoning such as all purpose of you have that)
5. Season with a little pinch of salt and pepper
6. Add the quinoa and continue to stir fry for a further 3-5 mins
